Claudia and Alfonso started at the bottom of Salt Lake City's restaurant kitchens — washing dishes, learning English, earning every skill. Santo Taco is what that journey tastes like.

When two of their kids became vegetarians, Claudia and Alfonso got creative. They went deeper into their Mexican roots — developing cactus tacos and calabacitas that proved great Mexican food has no limits.

In 2019, they opened in Rose Park — a tight-knit Latino neighborhood that felt like home immediately. The hole-in-the-wall vibe, the self-serve salsa bar, and the birria tacos turned first-timers into regulars fast.

Slow-cooked beef tucked into crispy tortillas with a cup of consomé for dipping — the birria became the dish people told their friends about. It's still what keeps the line moving out the door.
